My cupboard has been bare for a few weeks and I've been relying on energy drinks versus coffee as my morning go juice. Today I roasted 3 pounds of coffee in the garage. Temps were only in the 40s when I started. I roasted 1 pound of an Ethiopian variety and two from Panama. The Panamanian varieties will be more floral versus fruity and very complex. If you ever get a chance to try a Panamanian geisha bean, I highly recommend it.

Now I'll have to wait a few days for the beans to settle a bit. I went with a little darker roast than what I was previously doing. I also went a bit faster this time by turning up my burners. Each batch was done in between 7:30 and 8:30 (minutes). I'll be curious to taste the results. The beans definitely cracked more quickly and possibly a bit louder than usual. I'm looking forward to the first cup!

Cheers,

T Cobe

Bro T. you make that sound so good.
I thought you were making that up, geisha coffee? But I went on the Amazon and not only do they sell it in lots of forms, but they are proud of it too!!!!
Tell us how it comes out with a little darker roast?
I worked years ago with a drilling company, had an office in Lafayette, LA. Some good old boys worked in it. Went there for a company visit once, they took us to lunch, and one man ordered two fingers of vodka with his lunch, but he did it just the way I showed you in the pic, with the middle two fingers tucked away. First and last finger. I laughed, thought is was a funny joke, actually it should have been a joke having vodka with lunch at all, but the waitress knew him I reckon and brought him exactly as much as he ordered, WOW!!!!!
I guess he had a good lunch.
I can never hear two fingers used as a measure without thinking of that old boy (died in a plane crash, he was piloting, not long after that--always wondered if he was drinking on that job???)
Thanks to keep the reports up.
God Bless,
Wayne

Bro T. you know I have been struggling with the acidity of the most flavorsome coffees.
AND I am not really a fan of hot drinks per se at all, especially in the hot summers of Thailand. Most people over here drink iced coffee I think. What do I know?
ANYWAY, I think I may have found the answer to my coffee questions. COLD BREWED COFFEE!!!!
Just on a whim yesterday I course ground 95 grams of some medium roast pecan flavored beans (supposed to be, but they did not have much flavoring, and I could not have told you that flavor was pecans anyway) from Amazon and dumped it into cold water and brewed it for 16 hrs in the fridge. I did not make it exactly the right strength I am pretty sure, that will take some experimentation, and do not have a brew bag or sock, so had to filter it through the nylon filter in my old drip machine.
BUT it was pretty dad gum good, and NOT ACIDIC AT ALL!!!!! Even though it was a med. roast (some people on the net recommend darker roasts for cold brew). And they say on the net that I can leave this concentrate in the fridge for up to a couple of weeks, drink it when I want, cold or hot, with milk, sweetener, flavor, etc, or not.
Early days here but does anybody else drink cold brew coffee? Any suggestions?
Seriously, I think this may be just the ticket!!!
Will report back more.
God Bless,
Wayne
