The Cobe:
Stopped at Starbucks yesterday and got a cold brew/ice coffee. Only drank half, way to strong. Took your advice this morning and added a scoop of chocolate whey protein powder, 2 spoons of stevia, and a shot of soy milk, and filled her up with ice...Delicious! Making more cold brew for tomorrow afternoon...hope to duplicate what I did today.

I had to roast the beans just a touch longer. I had previously roasted them to just the first crack, and no more, but last evening I gave them a bit more. Today, it was light but delicious, and I did get some of those notes people write about. OR I imagined them!!! ha ha

I won't give you too much grief. It took you a long time to try the T1s too... ;)

It may well be that you just don't like a bright cup of coffee. Do you like other acidic beverages, such as many juices? There is nothing wrong with liking a darker roast, but I assure you that the French press is not the best way to go for medium or lighter roasts. Are there any coffee shops near you that serve a medium roast coffee? The best way to find out for sure is to try as many coffees as you can to see what your palette enjoys. Truly, it is about discovering what you enjoy. All other opinions should be taken with a grain of salt.

You may want to try some coffees from Mexico and Central America. They tend to be less bright and may be more up your alley. I like the coffees from Panama and Costa Rica. Just a few more options. Keep us posted.

I do like acidic drinks sometimes, usually with lime and salt!!!!
I am fine with the press, I just needed to roast those beans a little more, they are still acidic, bright, but now flavorful. I am just not doing the roasting right yet.
I already got some Colombian beans from Amazon, they are next.
MOST coffee shops around here use a DARK roast and make espresso, even if you ask for a regular/normal coffee, they will make an espresso and then add lots of hot water!!!!
That might confirm that the local beans are best dark roasted. Who knows?
I am still learning.

Well, I did not ave a really good cup of coffee in America at all.
I thought my coffee was not that great, but it was definitely better than what I ran into there.
Some, kind, well meaning people got some Pumpkin Spice coffee for me for Thanksgiving. YUCK!!!!!
Sad to say.
Just not my kinda thing.
But when there I found that a new company has started in Austin, TX making some really advanced coolers and insulated drinking things, called YETI.
I got one of their tumblers to keep my coffee hot (and cold drinks, well--cold). Works GREAT!
Finally a good cuppa today when I got back home.

Here's a plebeian coffee comment: My wife, Sheryl, and I enjoy morning coffee together every day. I brew a pot of coffee and we sit, drink, and listen to music and enjoy my wonderful GE speakers. In fact, we are doing just that as I type this post. Sheryl particularly loves Christmas and Christmas music, so we are listening to "Carols from Clare", a collection of favorite carols performed by the Clare College Singers and Orchestra, conducted by John Rutter (Sheryl's favorite CD).

As to coffee, we buy Eight O'Clock Coffee Medium Dark Roast Whole Bean at Sam's. I grind coffee about every three or four days and keep the ground coffee in an air tight container. I also keep the beans in another air tight container. I brew the coffee in a Bunn Drip Coffee Maker. It certainly is not gourmet, but we like it.
