Ok, I have been out of the game for over 12 years now ..So with all the new formats I want to make sure I get the right system for my needs and for my room . My current budget is about 5-6k including AVR ,sub and 5.1 or 7.1 or 5.1.2 system .
My family room is open to the kitchen and I really have no side wall space for any rears which leaves a back wall for rears and or in ceiling for rears or Atmos .. it's about a 17 x 15 room and ceiling is 10 feet vaulted and in the sitting area and center ceiling indents in to 10 feet 8 inches .
Was originally interested in triton 5 and super center xl and hsu sub vtf15 as the heart and base of the system as for rears atmos surrounds I'm conflicted to go mpx ,650 or 7000 ect ..here are the pics of the layout and room

Supered17, lovely place, lovely space, it is gonna be a great sounding system with the equipment you are considering.
I know nothing about the small speakers you are talking about, considering. But in the past I have put together a very good
home theater utilizing small speakers mounted up in the box ceiling like you have.
Not perfect but it will work and sound terrific.
Once in place you just measure and set the distances and then volume tests to set the right volume from the speakers to your main listening position. Find the best place for the sub.
AND I wold put some serious rugs down to absorb some of the sound that will bounce around the room.
You can get there, and it will be great!!!!

While there are many ways to go, consider HTR-7000 for rear channels and Invisa 650 for Atmos height channels. If your ceiling ends up higher than 10', consider the MPX for rear channels. The 7000 works best in most rooms if the ceiling height is no greater than 10'.

thats exactly what my dealer told me to do ...lol

now let me ask you this, would 5.1.2 be enough or will it make a big difference to do 5.1.4.. 7.1 was also a option just trying to see what works best for my room

You might want to rely on your dealer a bit more, no?

Given your room, 5.1.4 would work better than 7.1.

Regarding 2 or 4 height channel speakers, if the wires are to be pulled at the same time, the wiring cost should be only incrementally more plus the cost of two more speakers.
