Based on the budget you've identified, I'd suggest 3 T1s or even T2+s across your front behind an AT screen. That would sound amazing. If the primary use is home theater, I wouldn't worry about the marginal loss behind a screen. For the surrounds, I'd suggest whatever works for your room. If you can go with towers, then I'd suggest the T5s. Otherwise, you could save space with Aons or Invisa series speakers. With that budget, you could easily do an Atmos system with 7.2.4.
I'd recommend either the Marantz AV8802A or the Anthem AVM 60 and matching brand amps for your electronics. The AVM 60 with MCA 525 would sound great and would run approximately $6,500 for 5.1. The Marantz amps are less expensive than the Anthem and the 8802A has been more widely reviewed and praised at this point.
Did you plan to go with 4K/UHD for your projector? This is where I would advise caution. UHD projectors are still an emerging product and extremely expensive. I'd invest on a great quality screen in the neighborhood of $2,500 and purchase a modest projector such as the Epson 5030. UHD projectors should come down in cost significantly in the next couple of years. Otherwise, I think a UHD Sony projector goes for about $8,000.
