CONTENT IS KING!
One thing I think us nerds who are passionate about our audio/videophilia forget is that what we care about is to help tell a story! For the average person, it's not about flat frequency response, or hearing an extended dynamic range, etc. It's about experiencing a story.
When choosing demo material, it's important to think about the story being told in those 5-10 minutes. People will be impressed with your system with whatever you show, but if you choose a scene that has a complete story and ends with positive excitement, people will associate that excitement with your home theater!
For example,[SPOILERS] even though the big sky battle towards the end of Guardians of the Galaxy features some awesome vibrant colors and whirlwind of ship sounds, it's part of the climax of the film and actually ends on a low point for our heroes. Instead, I'd recommend the scene where they escape from prison. It starts with revealing what they need to do and how, features some humor and some fun action, but most importantly, it ends with the protagonists' success.
Tl;DR - Story is what matters. Choose a demo scene that tells a great story and people will love your system because it helps them experience that story.
